Grilled Corn and Garlic Scape Salad

Ingredients
- 5 ears of fresh sweet corn
- 2 tbsp butter
- 10 garlic scapes
- 2 tbsp olive oil
- 1/3 cup feta cheese
- 1 tbsp fresh lemon juice
- 1 1/2 tbsp chives, chopped
Directions
Heat grill
Shuck corn and coat with butter
Place on grill on high heat, turn often until charred
Use oil on garlic scapes, along with salt and pepper, place on grill
Grill both corn and scapes for about 10 minutes
Let cool, cut kernals off cob
Chop garlic scapes into 1 cm pieces
Add cheese and chives
Drizzle remaining oil and lemon juice - mix together
Serve and enjoy!
