Middle Eastern Carrot Salad

Ingredients
- 4 cups grated carrots
- 3 tablespoons lemon juice
- 3 tablespoons vegetable oil
- 1/2 teaspoon ground coriander seeds
- 1/4 teaspoon salt
- 2 teaspoons chopped fresh mint (1/2 teaspoon dried)
- 1 tablespoon chopped fresh parsley
- 1 to 2 teaspoons honey, sugar, or maple syrup (optional)
Directions
Mix on the ingredients together and chill at least one hour before serving.
