Parsley New Potatoes


  • 2 pounds small red new potatoes, unpeeled and cut into quarters
  • 3 tablespoons chopped fresh Italian parsley
  • 2 tablespoons butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Place about 2 inches of water in the bottom of a large pot.  Set a steamer tray in the bottom, cover and bring to a boil.  Place the potatoes in the steamer tray, cover the pot and steam for 12-15 minutes, until the potatoes are tender when pierced with a small knife.  Transfer the potatoes to a bowl and toss with the remaining ingredients.  Keep warm until ready to serve.
