Refried Lentils with Garlic Scapes

Great for tacos and nachos


  • 1 tsp oil
  • 3-10 garlic scares, finely chopped
  • 2-3 cups roasted diced pumpkin
  • 2-3 tsp taco seasoning
  • 400g brown lentils, rinsed and drained
  • 2 tbsp tomato paste


Roast pumpkin at 400F until softened

Heat oil, fry garlic scapes

Stir pumpkin and garlic scapes, add taco seasoning

Add lentils and tomato paste, warm through and remove from heat
