Roasted Garlic Fingerling Potatoes


  • 1 1/2 pounds fingerling potatoes
  • 4 tablespoons olive oil
  • 8 garlic cloves, sliced
  • 1 tablespoon freshly chopped Italian parsley leaves
  • Salt and freshly ground black pepper


Preheat the oven to 350 degrees F.  In a casserole dish, mix together the potatoes, oil, garlic, parsley, salt, and pepper. Roast for 20 minutes or until the potatoes are tender.
